Each pot is cooked to order and lands on your tray with brass bowls of banchan, so every meal feels like a small Korean table setting. The kitchen prides itself on doing rice the traditional way: when you reach the nurungji, the golden layer of toasted rice at the bottom of the pot, pour in hot water for sungnyung, the scorched-rice tea Koreans have finished meals with for generations.

The two dishes regulars plan around are the bossam, slow-cooked marinated pork that takes up to an hour to prepare (mention it when you book), and the gamja tang, a rich pork bone soup made in limited quantities each day. It is a sit-down spot rather than a quick lunch counter, and it rewards going with company so you can try more of the table.
